Do you ever have no idea what to cook for dinner?
I know that happens to me all the time and I either turn to Google to look for some new inspiration or I turn to my tried and true knock out recipes. Today I wanted to share my very favorite recipes to make for dinner. I might even make one of these tonight.
Chicken Dinner Recipes for Tonight
Harissa Moroccan Chicken: This one is so good and always a favorite of guests. I love to make this in a cast iron skillet. The ingredient that really makes this recipe a gem is the harissa paste. Without it, the recipe would be bland and boring but with it, the recipe comes together so quickly. I’ve made this with chicken breasts and chicken thighs. Both come out well, but the juiciness of the chicken thighs, especially after crisping them up is what really makes this magical.
Chicken Breasts on the Stove: If you have someone in your household that is really picky about chicken not being overcooked, then this is the recipe for you. Just like the title says, this is the way to make moist and perfect chicken breasts, every single time. You just have to make sure that you follow the recipe down to a T.
Chicken Thighs with Shaved Brussels Sprouts: The first time I saw this recipe was on The Chew. I immediately started taking notes to make sure I could recreate it. It is one of their five ingredient, five minute meals with each serving being under five dollars. I loved the idea of this meal being only a few minutes and coming together with just a couple ingredients. The use of chicken thighs, good mustard and bacon definitely brings the flavor to this dish. What makes this dish fast is the diced bacon and the use of a food processor to shave the brussels sprouts. This was the first time I ever cooked shaved brussels sprouts. Slicing the brussels sprouts thinly makes them so much easier to cook. Shaved brussels sprouts are much less finicky to cook than half or whole ones.
Ground Beef Dinner Recipes for Tonight
Taco Casserole: This is literally life changing. It is so good and a very flexible recipe. Ever since discovering this recipe, I make it all the time. It is flavorful, cheesy goodness and since it’s a casserole, you are guaranteed to have leftovers. Sometimes I leave out the garnishes or the bell pepper and add in kidney or black beans. Occasionally, I’ll add a layer of corn tortillas to the bottom of the casserole dish which gives it a nice heartiness. This best part of this dish is all the melted cheese, so make sure to not leave it out.
Vegetarian Dinner Recipes for Tonight
Instant Pot Mac and Cheese: Having just jumped on the Instant Pot craze, this was one of the first things I used it for. There are a ton of Instant Pot Mac and Cheese recipes, but this one is seriously, the best! It uses whole milk, instead of evaporated milk and with freshly shredded cheese, it tastes amazing. If you have a food processor, you can shred a whole block of cheese in no time flat. I think the key to the amazing flavor of this recipe is adding in the hot sauce at the beginning. Like mentioned in the article, it doesn’t make it overly spicy, it just adds a nice layer of flavor to the recipe.
